How To Prepare Simple Kale Salad | My Go-To Recipe

This simple kale salad is tasty, healthful, and quick to prepare. It’s a crisp, raw salad that my family declares to be “the BEST kale salad recipe” they’ve ever tasted! Needless to say, I cook it frequently.

The only ingredients are kale, extra virgin olive oil, kosher salt, garlic, and lemon. You may eat this salad plain or add your favorite salad toppings to fill it more.

I usually prepare the kale as part of my meal prep so that I always have some dark leafy greens on hand for the week. First, wash the kale leaves, remove the stems, roll them up, and slice them into thin ribbons.

After that, I spin them to remove any extra moisture and store them in an airtight container lined with paper towels. This method will keep them in the fridge for up to five days.

How To Make Simple Kale Salad Recipes

I am showing you how to make my Goto very simple kale salad every day. This is a salad that I make several times throughout the week and over the holidays. My cousin was over, and I made it while she was here, and she was raving about it.

She really wanted me to share the recipe, and I hesitated to share it with you all because I feel like it’s not even a recipe. After all, it’s just so easy. But then I started thinking that, you know what? Leafy Greens are the number one missing ingredient from the American diet.

And sometimes, just having simple recipes like this in our back pocket makes it much easier to get these delicious ingredients onto our plates. So I’m going to show you just how easy and delicious it can be.

Simple Kale Salad Ingredients

These are the required Simple Kale Salad ingredients needed to prepare this delicious recipe.

  • 1 kale bunch 1 kale bunch 1 kale bunch 1 kale
  • 1 tbsp olive oil (extra virgin)
  • kosher salt, 1/8 teaspoon
  • 1 garlic clove, smashed
  • 1 tsp lemon extract

Instructions

  1. Using cold water, rinse the kale. Remove the stems, roll the leaves, and slice the ribbons into thin strips.
  2. Spin them in a salad spinner to drain any excess water from the kale ribbons. This is crucial if you want your dressing to stick to the kale leaves.
  3. Drizzle olive oil over the kale in a large mixing bowl, then season with salt, garlic, and lemon juice.
  4. Use your hands to gently massage all of the ingredients into the kale. If the kale is really sensitive, gently toss it with tongs (no massage necessary!).
  5. Add your favorite salad toppings or eat it plain.

Notes

  1. Keep the kale stems! Chop them up into small pieces and saut√© in olive oil with garlic, salt, and pepper until soft. They’re great in scrambled eggs or mixed up with your favorite whole grains.

Simple Kale Salad Procedures

Step 1

So to start off preparing Simple Kale Salad, you need one bunch of kale. You can use curly kale, or you can use lactino kale, which is also called dinosaur kale.

Either works perfectly fine. I usually just buy whichever looks the brightest and most vibrant at the grocery store or whichever is on sale. Then the first thing we’re going to do is give it a rinse under some cold water.

I just usually do this leaf by leaf. Just give it a good rinse on both sides. And then once I’ve got them all rinsed off, you want to remove the stems. This is simple. You just hold the bottom of the kale stem, pull the leaf up and away from the branch, and you will see that the leaf pulls right away from the stem.

From here, I stacked the leaves on top of each other. I usually do a couple at a time, roll them up nice and tight like a cigar and then come across and do a nice thin slice.

Step 2

This is going to create thin kale ribbons. It’s kind of like when you’re cutting basil. It’s also called a chiffonade when you roll it up like a cigar and then do that thin slice.

Now I like to take the kale and pop it into a salad spinner. And the reason we do that is that you want to pull as much excess moisture off of the leaves as possible.

This way, the dressing will stick to the kale. This is actually important. Anytime you’re making a salad, you want to take as much water off the Greens as possible.

Then once that’s all ready to roll, the kale is ready to be dressed. Now for all of my meal preppers out there, you can do all of this on the weekend. And then, what I like to do is store it in an airtight container lined with a paper towel at the bottom.

This will last in the fridge for up to five days. Sometimes I’ll do a couple of bunches of kale just so I have it in there ready to go. Then when you’re prepared to make your salad, that’s all you’re going to do, and the measurements here, guys.

Step 3

It’s a loose estimate because each bunch of kale will get you anywhere between four to six cups of kale, so you’re just going to want to play with it until you get the taste exactly where you want it. So you’re going to start with a heaping tablespoon of the best extra Virgin olive oil that you have in the house.

Then I give it a nice fat pinch of kosher salt, one clove of crushed garlic, make sure it’s a nice fat clove, and then a squish of fresh lemon juice. Just a teaspoon or two, I like to get it all on there, and then I use my hands to gently massage this into the kale; massaging it into the kale just gets all of those leaves coated with the dressing, and it helps to break the fibers of the kale leaves down just a little bit.

Conclusion

I find if you buy a nice young, vibrant, tender kale, it doesn’t need all that much massaging, just a little bit to get everything worked in a simple kale salad.

Now from here, this very simple salad is done. It’s ready to go. We often eat it just like this. It’s bright, it’s fresh. You get the fruity flavor from the olive oil, and then the garlic salt and lemon just give it the perfect kick. I love this simple salad, and I hope you enjoy it just as much.
